What the traditional version is

Thinly sliced potatoes, layered in a dish with salt, pepper and sometimes a little onion or nutmeg. You pour over hot stock and then drown it in double cream. A serious layer of cheese, usually Emmental or Gruyere, goes on top. Bake until bubbling and golden, then sneak a piece before it cools down and turns solid.

What changed, and what each change costs

1200g of potato down to 600g of potato with 600g of cauliflower

Potatoes are all about starch and comfort, but you don't need a kilo of them to get that. Swapping in half cauliflower takes a big bite out of the calories and carbs without wiping the dish clean of its soul.

What it costs you. Cauliflower is nothing like potato. It gets soft, a little wet, and never truly feels as comforting. But with the cream and cheese, it does at least belong in the same postcode.

450g of double cream down to 150g, with 200g of fat-free Greek yoghurt and extra stock

This is the other knife to the heart. Cream is what makes the original so lush, but using it in industrial quantities is frankly irresponsible unless you are carb-loading for a marathon. Quark or yoghurt add creaminess and tang for almost no fat.

What it costs you. You won't get that thick, unbroken layer of cream that cracks as you spoon into it. The top is more bubbly and less silky, but it's still rich enough to be worth your time.

180g of Gruyere down to 80g, mixed with 100g of quark

A thick, molten roof of Gruyere is what everyone wants. But it's expensive and dense. Mixing in quark for half the cheese gives you the creamy top without bankrupting your calories or your wallet.

What it costs you. The cheese pull is a memory. But there's still enough real Gruyere to keep it honest. You end up with a potato and cauliflower bake cosplaying as one. The version that's a true gratin is still out there and still better.

The method is in the book

This is a compromise, but it's not an apology. The cauliflower does a better job than you'd think, and the quark-cheese topping has a surprisingly plush feel when you get it right. The diehard will grumble about the lack of double cream and rivers of cheese, but this is still a proper comfort food - just without the nap afterwards. And you can always pile more onto your plate without running for the defibrillator.
