What the traditional version is

Short-grain Arborio rice toasted in oil, flooded with wine, then slowly hydrated with hot stock. Finished off the heat with a massive knob of butter and a handful of Parmesan beaten in until it goes thick, rich and glossy. It's beautiful, but heavy.

What changed, and what each change costs

80g of butter down to nothing, replacing it with 80g of quark

Butter adds 570 calories of pure fat. Quark gives you 11g of protein for barely 50 calories, and it mimics the dairy creaminess of a true mantecatura.

What it costs you. You lose that unmatched, glossy mouthfeel that only butter gives. Quark brings the texture and a slight tang, but A structural stand-in, then. Not butter, and I'm not going to pretend otherwise. You've got to accept a slightly matte finish on the sauce.

80g of Parmesan down to 40g

Parmesan is brilliant, but it's heavy on calories. Cutting it by 50% saves you 160 calories without losing the fundamental savoury hit, as long as you grate it very finely.

What it costs you. The background richness drops. I make up for it by leaning heavily on the mushrooms and the chicken stock to bring the umami.

300g of mushrooms up to 700g, and 320g of Arborio rice down to 250g

Drop the starch by 20% and double the vegetables to fill the physical space on the plate. Mushrooms are mostly water and trace protein, costing almost nothing.

What it costs you. The ratio of rice to vegetable shifts hard. It feels more like a mushroom stew with rice than a classic restaurant risotto. It also takes longer to prep and cook off the water the mushrooms drop in the pan, so you'll stand over the stove for 5 extra minutes.

The method is in the book

It lacks the staggering richness of a restaurant risotto, but it delivers on the savoury, earthy comfort you actually want from this dish. Pushing the mushrooms to 700g gives you plenty to chew on, and the quark does exactly what you need it to do for the texture. It's a massive plate of food for the calories.
