What the traditional version is
Arborio rice toasted in a heavy glug of olive oil, cooked slowly with white wine and fish broth. Finished with a modest handful of mixed seafood and sometimes another slick of oil stirred in at the end for shine.
What changed, and what each change costs
80g of olive oil down to 15g
The olive oil is the first thing to go. It costs you over 700 calories in the original dish, and it brings absolutely zero protein to the party.
What it costs you. You lose the glossy restaurant sheen. The rice won't have that rich fatty mouthfeel, so you have to beat the starch out of the grains with your spoon to get it creamy.
400g of Arborio rice down to 250g
Rice is pure carbohydrates. Trimming a big chunk of it away drops the calories sharply so you can afford to eat more meat.
What it costs you. It makes the dish less filling if you look at the starch alone. You can't rely on the rice to fill you up, which is why the seafood has to do the heavy lifting.
150g of prawns up to 350g, and doubled the mussels and clams
Shellfish gives you incredible protein for very few calories. Packing the pan with them drives the protein up without ruining the calories.
What it costs you. Money and time. Shelling this much seafood takes real patience, and you'll definitely dent your wallet buying it all.
