What the traditional version is

Two sheets of choux pastry, baked golden and layered with a thick slab of vanilla buttercream. The top looks dramatic and mountain-like. The filling is rich, creamy and heavy on butter, with plenty of vanilla.

What changed, and what each change costs

Buttercream filling for set vanilla custard

Buttercream is half the calories right there, mostly from the block of butter. Swapping for a thick vanilla custard means you still get the vanilla flavour but lose almost all the dense richness. Skimmed milk and cornflour keep it light, but it goes from unashamedly rich to school pudding territory.

What it costs you. The original is firmer, thicker and you can pick up a piece without fear. This version is gentler, a bit wobbly, and won't satisfy anyone angling for a butter fix. If you want that cold, heavy slab, you know what to do.

Whole milk and egg yolk in the custard replaced with skimmed milk and whole egg

Egg yolks and whole milk help make the custard rich, thick and golden, but they also add fat. Using whole eggs and skimmed milk gives you a passably thick custard with a bit less colour, and a lot less fat. Cornflour does the heavy lifting.

What it costs you. You get a paler filling that's springier than the original. It holds its own, but don't expect a golden, glossy centre. It's pudding, not patisserie.

Less butter in the choux, no change to pastry structure

Choux pastry does need some fat to puff up, but you can get away with using less than the classic recipe. The mountains stay dramatic and the top is just as craggy.

What it costs you. A little less buttery flavour, but most of it's coming from the filling anyway. Basically no one will notice unless they work in a Parisian bakery.

The method is in the book

You don't get the glorious, stubborn density of traditional Karpatka with this filling. If you want a pudding that leaves you checking your pulse, this won't cut it. But you do get plenty of vanilla, clouds of pastry and something that doesn't feel like a dare. The custard's a bit shy, wobbling about and not quite sticking the landing, but it's light enough you might actually want a second slice. The mountains are still there. The snow's the same. Only the valley's a bit less intimidating.
