The best Christmas Eve dinner ideas come from the countries where the 24th is the main event. In Poland, much of Central Europe and plenty of Catholic households elsewhere, Christmas Eve is the big family meal, and it's often meatless. That makes it the lightest celebration dinner of the year before anyone changes a thing.

Poland: Wigilia
The Polish Christmas Eve supper, Wigilia, waits for the first star and traditionally has no meat. It opens with Barszcz, a clear, sour beetroot soup, with Uszka Mushroom Dumplings floating in it: tiny mushroom dumplings whose name means little ears. Then come Cabbage and Mushroom Pierogi and fish.
Barszcz is already light. All I changed was most of the sugar, which takes it from 96 to 72 kcal a bowl. The pierogi lose the butter in the dough and drop from 656 to 495 kcal. The whole Polish table is in Authentic-ish Polish.
The fish course
Carp is the Christmas Eve fish across Poland and Central Europe. Baked Carp with Lemon swaps it for sea bass, which is easier to find and leaner, and drops the butter for white wine. It lands at 193 kcal with 31g of protein. Carp is meatier and the book says so.
Pickled Herring is the cold fish that sits on the table all evening.
Italian-American: the fish on the 24th
Plenty of Italian-American families cook several fish dishes on Christmas Eve. Salt cod is the backbone. Baccala Mantecato whips it into a spread with a great deal of olive oil; swapping most of that oil for potato takes it from 738 to 383 kcal and keeps 35g of protein. Serve it on toast or polenta.
Mexico: tamales for Nochebuena
In Mexico, Christmas Eve means tamales, made by the dozen with the whole family on the assembly line. The masa is beaten with lard; Tamales cut the lard from 250g to 50g and use skinless chicken in the filling. They come in at 352 kcal against 578. The masa is less fluffy, and that's the first thing you'll notice.
A Christmas Eve menu
Barszcz with uszka, baked sea bass, pierogi on the side, and a slice of stollen or poppy seed roll later in the evening. It's warming, it's mostly made ahead, and it leaves room for the 25th.
Every dish is in Authentic-ish Christmas, printed twice: the traditional version first, then the lighter one. For the big day itself, see Christmas dinner ideas from 17 cuisines.
