What the traditional version is
A pile of red berries - mostly blackcurrants, raspberries and cherries - cooked down with sugar and a little starch until thick but still tart. Served cooled, usually with a cold vanilla sauce made from double cream, milk, egg yolks and plenty of sugar, or just poured over with double cream.
What changed, and what each change costs
Out goes 300g double cream and 80g egg yolk, in comes 350g fat-free Greek yoghurt and an extra 100g milk.
The sauce is where the sugar and fat bulk out the numbers. Using fat-free Greek yoghurt slashes the fat, and you don't need egg yolks at all. I keep a dash of real vanilla for flavour, and add a spoonful of cornflour to help the yoghurt sauce thicken. It's definitely sharper and not as lush, but it's honestly lighter and brighter.
What it costs you. You lose the proper mouthfeel of classic vanilla sauce. No yolks means you miss out on the silkiness, and no double cream means the sauce doesn't coat your spoon. Swings and roundabouts: your arteries will thank you, but the dessert feels a bit more like breakfast.
Sugar in the compote reduced from 120g to 60g.
The berries don't need as much help as you think. By trimming the sugar, you let the tart fruit shine through, and you can get away with a more grown-up finish.
What it costs you. The pudding isn't quite as sweet as Granny used to make it. If you've got a sweet tooth, feel free to sneak a bit more in, but don't blame me if it tastes like a jam factory.

The method is in the book
You lose the richness of the yolk-and-cream sauce, no question. But the fat-free yoghurt gives a cold, tangy sauce that makes the fruit taste fresher. This is more of a summer pudding and less of a custard bath. It's not as decadent - but it actually leaves you wanting another spoonful. The swap is fair if you want something less filling. If you don't, go back to the classic and lie to your dietician.
